href="http://lickmyspoon.com/travel/cochon-butcher-divine-swine-new-orleans/" target="_blank">Cochon Butcher</a>. The town, <a
href="http://lickmyspoon.com/category/travel/new-orleans/" target="_blank">New Orleans</a>.</p><p>It was everything I ever wanted in macaroni and cheese…and more. It insanely <strong>saucy</strong>. Astoundingly ooey, gooey, creamy, and cheesy. A goldmine of crispy bits of house-made <strong>pancetta</strong> was buried throughout. And a crust of buttery breadcrumbs freckled with herbs made it all crunch on top.</p><p>Bite after bite, I marveled at what a perfect specimen of mac and cheese this was. It had a complexity of flavor that I couldn’t put my finger on. This mac had depth. It had integrity. It had layers. I had to know Cochon’s secret. They are typically stuffed with some sort of ground meat and cheese, breaded, and fried. I had the best <em>arancini</em> of my life in Sicily, where they were the size of softballs and stuffed with pistachio pesto (!). I definitely plan on turning my favorite <a

No recipes.  No rules.  Her style is beautifully Italian.  Some fresh produce from the <em>fruttivendolo</em> down the street, a few generous glugs of EVOO liquid gold from her hometown in Calabria, and magic just happens.  I learned on this last stay that Mari apparently bakes in a similar fashion.</p> <a

All it takes is flour, sugar, eggs, olive oil, yogurt, vanilla, baking powder, salt, and ripe fruit.  Mari mostly made a banana version, but while I was there we experimented with using some divinely sweet and juicy peaches -- highly recommended. href="http://lickmyspoon.com/travel/cooking-class-at-ramekins-with-joyce-goldstein/" target="_blank">Joyce Goldstein</a>, who adapted it from a recipe she learned from the Trappist nuns at the <em>Vineria Cozzi</em> in Bergamo Alta, Italy.  Originally called <em>Crostata di Marmellata delle Suore Trappiste</em>, the tart is filled with orange marmalade made by the nuns.  In our version, blood oranges are used in place of regular oranges for their gorgeous color and flavor, “like an orange mixed with a rose,” as Joyce aptly described.</p> <a

These were really supposed to be amazing chewy pumpkin toffee cookies.  Apparently <strong>chewy</strong> and <strong>pumpkin cookies</strong> are notorious nemeses.  Had I consulted the internet before attempting such a perilous undertaking I could have saved myself much heartache, wasted butter, and trays of puffy pumpkin "cookies" taunting me with their flagrant cakiness.</p><p>I felt like a failure.  A fraud.  What happened?  Why did my cookies turn into cakes?  It's all the pumpkin's fault.  I learned that the high moisture content of pumpkin puree was the cause of my demise.  There are two purported solutions:  simmer the puree until the moisture is cooked out, or use pumpkin butter instead of puree.</p> <a
