If you’ve been following along, I’ve been shaking up my summer entertaining with Kahlua over the past few months, first with this Kahlua-spiked Vietnamese Iced Coffee followed right up by these finger-lickin Kahlua Coffee Baby Back Ribs. For my final installment, I wanted to go all out decadence because that’s just what August calls for – one last hurrah for summer fun!
I turned to the classic Kahlua Frozen Mudslide for inspiration. Typically, a mudslide is simply 1 part Kahlúa, 1 part vodka, 1/2 part Irish cream liqueur, and 1 part vanilla ice cream, blended up and garnished with chocolate syrup. But why settle for the typical?
Presenting the Kahlua Mudslide Ice Cream — all the grown up indulgence of a frozen mudslide, re-imagined into ice cream form! We start with an ice cream base of Kahlua and Irish cream, fold in crunchy chocolate cookie chunks, then swirl in thick drizzles of rich mocha fudge.
I did say I was going to go all out decadence, no?
Starting with this dreamy creamy ice cream base spiked with equal parts Kahlua and Irish cream liqueur. I love the salt in this – it really balances out the sweetness of the other mix-ins to come. It almost tastes like a salted butter pecan to me. And because of the alcohol content in this ice cream, you’ll find that it churns up much softer than other ice creams, so be sure that the base mixture is thoroughly chilled before attempting to churn.
Now let’s talk about this Mocha Fudge Sauce. Holy richness. Homemade fudge sauce is shockingly easy to make, but if you’re in a pinch, by all means just warm up your favorite store-bought hot fudge sauce, add a tablespoon of instant coffee granules to it, and voila! Mocha hot fudge sauce!
I got so excited about my mocha fudge that I went ahead and swirled it right into my churned base before pouring it into the container. In hindsight I would have layered it as I poured it into the container (as noted in the recipe instructions below). So do as I say, not as I do! Sure does make for a pretty picture though.
Now it’s cookie time. Fold in your chocolate cookie chunks. Again, you could use store-bought chocolate wafers or cookies. I used my favorite recipe for Chocolate Meringue Cookies. They make for an amazing texture – some softened into brownie-like chunks while others maintained some crunchiness. We loves a texture party.
