BBQ Spare Ribs

Pi Gwut (Mini BBQ Spare Ribs) Pi Gwut (Mini BBQ Spare Ribs)
This recipe can be used on full sized spare ribs, or you can make mini versions by asking your butcher to cut the baby back ribs lengthwise, and then butchered into bite-sized pieces.

Ingredients:
1 rack baby back ribs
3 tablespoons spare rib sauce
1 tablespoon char siu sauce
1 tablespoon hoisin sauce
1 tablespoon ground bean sauce
1 tablespoon honey
1 teaspoon garlic salt
1 teaspoon sesame oil
2 teaspoons Chinese cooking wine
a dash of black pepper

Preparation:
Rinse and pat dry the ribs. Mix together all the ingredients to create the marinade. Rub into the meat well and let marinate overnight.

Bring the meat to room temperature. Place the meat on a baking sheet. Set aside the left over marinade.

Slow roast at 275 degrees for 1 hour. Brush with the leftover marinade. Put it back in the oven for another 30 minutes.
Repeat, brushing with marinade and cooking for another 30 minutes.

Brush with marinade and honey and place back in oven for another 10 minutes. Keep your eye on it as the honey glaze may caramelize quickly. Flip and repeat.
