Dark Chocolate Mousse & Strawberry Parfait

Serves: 4

Ingredients:
6 oz. 60 % dark chocolate bar broken up (or 1 cup chocolate chips)
½ cup milk
1 cup heavy cream
1 pint fresh strawberries
1 tablespoon sugar
Zest of 1 lemon
Martini glasses to serve

Dark Chocolate Mousse:

1. In a bowl over barely simmering water, melt the chocolate, stirring until it is smooth.
2. Heat the milk in a saucepan until almost simmering and whisk it into the melted chocolate. Remove the mixture from heat, and transfer to a larger bowl if need be.
3. Whip the heavy cream into soft peaks.
4. Fold the whipped cream into the chocolate mixture; it will be soupy.
5. Transfer it to a Ziploc bag and refrigerate at least 3 hours (or until chilled).

Strawberries:
1. Wash, hull, and cut the strawberries into small pieces.
2. Toss with sugar and lemon zest.

Preparation:
1. Spoon a layer of strawberries into the bottom of the martini glass.
2. Snip one of the bottom corners of the Ziploc bag so you can neatly squeeze out the mousse, creating a layer on top of the strawberries.
3. Repeat layering until the glass is full, ending with mousse on top with a garnish of strawberry.

Note: Can be prepared ahead of time and kept in the fridge until ready to serve.
