Life is all about balance. So, while there are definite occasions for stick to your ribs ribs and phatty chocolate cake, and all the ice cream…there are also times to go a little lighter, a little cleaner.
I’ve been trying get more greens into my daily diet and making an effort to do a “paleo mindful” / “whole 30 weekday” thing (Oh gawd, have I become an SF foodie parody of myself? Maybe, but at least I’ll be a parody that glows from the inside out from all my newfound phytonutrients). Limiting the dairy and upping the veggies have been challenging — good thing I have friends who can make it easier.

I tried out the 1-Day Meal Plan, which includes 3 meals, 2 juices, and 1 snack.
For breakfast I received vegan coconut yogurt with plump berries and a gluten-free granola of nuts, seeds, and goji berries.
Lunch was a rainbow salad of tender kale, cucumbers, carrots, avocado, blueberries, almonds and hazelnuts with a creamy lemon vinaigrette. I was feeling more virtuous already.
Dinner was a satisfying Cali-Tex-Mex mix of kale, quinoa, and black bean salad with a citrus-chili dressing and cashew “cheese”. FYI, cashew cheese has been a savior in this whole no-dairy experiment. I’m a fan.
My dessert/snack was a tasty treat of chia seed pudding soaked in Thistle’s housemade vanilla almond milk, topped with a superfood medley of cashews, macadamia nuts, pistachios, mulberries, golden raisins, goji berries, golden berries, and cacao nibs. Love me some chia pudding!
The two juices I received were Verdance (a jade elixir of kale, spinach, apple, parsley, celery, lemon, cucumber, and ginger), and Canary (almond milk, turmeric, medjool dates, vanilla bean, spices and sea salt). Thistle started out as a juice company, and you can tell this is where they shine. The green juice was the perfect mid-morning pick-me-up. And that color. I mean, you’ll feel healthier just looking at it.
And the Canary spiced almond milk was just lovely. It was just want I needed when that 3 pm sugar-craving hit. Also that sunny lemon color – if I had a wide open, farmhouse country kitchen I’d want to paint it that color.
