Romanesco, the Lady Gaga of Broccolifeatured

Romanesco is like the Lady Gaga of broccoli.

Unapologetic, captivating, a bit peculiar. Certainly there isn’t a more stylish vegetable.

With its kaleidoscopic spires and minarets, it looks like it could be some kind of architectural coral from the ocean floor…or Mars. The fractal nature of broccoli romanesco’s structure is quite stunning, and what’s even more remarkable, the number of spirals on a head of romanesco is a Fibonacci number.

Sometimes called “Roman cauliflower” the lineage of the vegetable indeed goes back to cauliflower, and it has the same texture of cauliflower, but the flavor is closer to that of broccoli, except more subdued.

As I pondered how to cook this beautiful head of romanesco, my mind landed on another classic Roman dish, Cacio e Pepe, traditionally a simple and satisfying spaghetti dish adorned with just Pecorino Romano cheese, black pepper, and some olive oil.

With a few tweaks and coaching from America’s Test Kitchen and Serious Eats, a properly Roman dish was born: Romanesco Cacio e Pepe.

High Five Fridays: Weekly Meal Plan, Soups Onfeatured

Whew, what a week! I survived my first full week of cooking school, and if you’ve been following the daily report back on Instagram you’ll know that we have been making a lot of soup. Curry-spiced carrot soup with lime, potato leek soup, four onion soup, roasted garlic soup, parsnip soup, cucumber soup, rutabaga soup, turnip soup, cauliflower soup, celery root soup, even cream of lettuce soup, not to mention some big pots of vegetable and chicken stock.

One would think that I’d be all souped out…but you know, with the chilly weather upon us, it’s actually quite perfect. Here are some soups to get warm and cozy with on this High Five Friday:

  1. Healthy Butternut Squash Soup. Comforting, nourishing, zero-guilt goodness, using only 3 main ingredients. You just can’t beat that.
  2. Lemon Chicken Spinach and Orzo Soup. There is a nasty flu going around this winter. If it strikes, get yourself some of this healing soup stat. Bonus, you can make it in the pressure cooker so just set it, pass out under the covers for a bit, and wake up to some feel-better-soup.
  3. Best French Onion Soup. America’s Test Kitchen comes through yet again with a slam dunk. This classic soup is pure satisfaction, full of rich, sweet caramelized onions, and increased depth of flavor using both chicken and beef broth. They even share their pro-tip on what brands of broth they prefer.
  4. Creamy Mushroom Soup. A combination of fresh and dried mushrooms gives this soothing, velvety soup a complex mushroom-y flavor. A drizzle of truffle oil on top sends it over the edge.
  5. TREAT YO SELF: Mini Pies with Pears and Blue Cheese. Too flippin cute. What a brilliant idea to mold the pastry crust to the pear halves. I would love to serve this as either a starter over some salad, or as a dessert-and-cheese course in one.

Wailea Wine and Food Festival: Wine Sessions, Part 1featured

For winos (and I mean that in the most flattering way), the Wailea Wine and Food Festival is like being a kid in a candy store — a really nice candy store with bins overflowing with rare, expensive treats handcrafted with fanatical care.

For wine lovers, this is a truly special experience. Some of the world’s most respected wine makers and master sommeliers came to play at the Wailea Wine and Food Festival. At these intimate wine sessions, not only did we get the opportunity to taste wines we haven’t even dreamed of yet, we got to actually shake hands with the person who made that wine and get inside their wine-knowledge-filled head.

Wailea Wine and Food Festival {Maui}featured

Have you had a touch of the post-holiday blues lately? Is it because you’re not eating carbs, or sugar, or gluten right now? Is it because you’re 4 days into Insanity and well, you’re starting to feel a little insane?

Well, let me take you away to a better place for a brief respite. A place full of blue skies and palm trees and secret beaches. Throw off that winter cranky coat, you’re going to Maui!

When the good people at the Wailea Wine and Food Festival invited us out to check out the inaugural event, we obviously jumped at the chance. The festival spanned four glorious days of indulging in award-winning cuisine from Wailea’s acclaimed chefs, and an incredible selection of wines curated by master sommeliers.
