10 Food Prep Tips + Recipes for Burning Manfeatured

Today I bought three huge bags of neon fur and a pound of glitter to mod podge. Because that’s just the kind of stuff on your to-do list when you’re getting ready for Burning Man.

It’s my first burn and I am positively buzzing with anticipation. Outfits and magical fairy dust aside, there are practical survival things to think about too, like what are we going to eat?

We are going to be in the middle of the desert in hundred degree weather and no refrigeration, just coolers and a supply of ice. It’s going to be extreme camping cooking, but that doesn’t mean we can’t eat well! I’ve done my research and have picked up some great advice:

10 Tips & Tricks on Preparing Food for Burning Man

  1. Ziplocks are your best friend. Even better, a vacuum sealer is your bestest best friend, but Ziplocks will do fine. Playa dust will get on everything and the best way to minimize ingestion of it is to prepare and portion out meals ahead of time.
  2. Portion out your ice in Ziplocks. When it melts, your cooler won’t turn into a soupy mess, and you’ll have a baggie of ice-cold water to drink. Ahh, refreshing!
  3. Elevate your food in the cooler using Tupperware or layers of cardboard. If your bags of ice leak, this adds some protection for your goods so they’re not sitting on the bottom of your cooler in water.
  4. Label your coolers with contents. This will minimize unnecessary opening and closing. This especially holds true if you are the kind of person who stands in front of the fridge hemming and hawing over what you’re in the mood for.
  5. Your body will crave hydration, protein, and sodium. Plan accordingly. Some popular items: bacon, soups, chili, peanut butter.
  6. Opt for sturdy breads. Flat bread and naan will last longer than softer breads.
  7. Don’t forget your coffee/tea/French press. Mint tea can help settle stomachs.
  8. Bring Coconut Oil. You can cook with it, use it to soften hands and feet battered by the elements, and it doesn’t require refrigeration.
  9. Have an easy meal ready for Night 1. You are going to be excited and busy setting up camp. It may be late. You won’t want to cook a thing. Grab a burrito in Reno so you have something easy and ready to eat.
  10. Get some of your favorite take-out and freeze it. It will be a great later-in-the-week treat. Indian? Great choice. Sushi? Not so much.

Overall, my game plan is to prepare as much as possible in advance, portion out the meals, vacuum seal, and freeze them so that on-site prep will be fast, easy, and will produce minimal grey water (you are not allowed to dump waste water on the playa).

High Five Fridays: Weekly Meal Plan (8.17.12)featured

Summer is going by way too fast! Make it stop.

I need Evie to do that finger touch time freeze thing for me.

However, since stopping time is unlikely, the next best thing is to savor it. Stretch it out like salt water taffy. Go outside and play this weekend. There is summer fun to be had, sunshine to soak up, green fields to be frolicked in, glimmering stars to be gazed upon…

  1. Tomato Tarte Tatin. The summer tomatoes, the pie crust, the skillet baking…everything about this recipe makes me happy.
  2. Chanterelle Tacos. Simple + satisfying…this is just what summer days call for.
  3. Miso Glazed Cod. The perfect weeknight meal. Mental note: this would be awesome with these soba noodles.
  4. Chicken Pho. For everyone sweltering in summer heat right now, you are probably thinking I’m crazy for wanting pho. But for those of us experiencing a San Francisco summer (aka one that gets really chilly at night), this comforting noodle soup sounds perfect.
  5. TREAT YO SELF: Old Fashioned Banana Pudding Ice Cream! I’ll have a double scoop, please.

Preview: SF Street Food Festival & Night Marketfeatured

Dear San Francisco, you are killing me with the fun. First SF Chefs, then Outside Lands, now the Street Food Festival, three weekends in a row? You are aggressive. Aggressively fun.

THE NIGHT MARKET

This weekend’s fun starts tonight with La Cocina’s first ever Night Market. It’s at the Alemany Market (free shuttles will be running from the Mission), and from the looks of it, after tonight your stomach will be sufficiently warmed up for tomorrow’s festivities.

On my hit list is The Boss Hogg from the Bone & Gristle Boys (a collaboration with Ryan Farr of 4505 Meats and 3 time Cochon 555 winner, Matt Jennings of Farmstead). I don’t even know what’s in it, but they promise it will change lives and I’m a believer.

I’m also excited to sink my teeth into Jardiniere’s Wagyu Beef Slider, Nopalito’s Gordita Campechana (handmade masa cakes with the works), and Sabores Del Sur’s Empanadas.

And, it’s summer in SF, so you know it’ll be freezing. Expect to see me slurping down a steaming bowl of Bún Riêu from the Soup Junkie. Also excited for an encore of The Whole Beast’s Indian-style lamb Mulligatawny Stew – we had a taste of it at Outside Lands and it hits the spot on a chilly night.

Then the games begin tomorrow at the actual Street Food Fest. I had the chance to preview some of the dishes that will be served, and let’s just say you are going to be pummeled with good eats.

  1. Warm Mexican Street Corn Salad + shrimp + tacos. YES.
  2. Tomato Sandwich. I live for tomato season in Cali and we are elbow deep in them right now! These tomato sandwiches may be the best way to enjoy the perfect tomato. I’ve been inhaling Early Girl tomato sandwiches all week. Heaven.
  3. Arugula and Walnut Pesto Pasta. Would also be great sans pasta with just the pesto slathered over some steak.
  4. Tuscan Baked Chicken. This one-skillet chicken is so easy and delicious. And it’s “self-saucing”. Sold.
  5. TREAT YO SELF: Homemade Chocolate Peanut Butter & Jelly Cups. Mind. Blown.
